How can I increase the carbonation levels in my Perlini cocktails?

Perlini is easy to use, but it does take a little finesse to get the best carbonation. You should be able to get carbonation levels comparable to that of a bubbly Champagne. If you are not getting the effervescense you want, carefully follow these steps.
1) First and most important, the liquid being carbonated MUST BE ICE COLD. Most people fill the bottom part of the shaker with ice cubes, then pour the cocktail mix over the ice. This will typically yield a 4-5 ounce cocktail with the ~30% dilution you will get. If you are making non-alcoholic sodas (say) and want to get more volume, you can fill the bottom half with soda mixture all the way up to the rim. You should be able to get a solid 8-10 ounces of soda from a single shaker.
2) Screw the top part of the shaker on, and screw the cap on. Please do not overtighten--finger tight is fine.
3) Pressurize the shaker. This should take about 2-3 seconds with the commercial pressurizer, and 8-10 seconds with the handheld filler. You’ll know when it's done, because you can hear the CO2 stop flowing.
4) Shake the Perlini container vigorously as if you were shaking a regular cocktail, for a solid 6-8 seconds
5) If you are trying to carbonate a larger-than-usual amount of liquid (e.g., a 10 ounce soda instead of a 4 ounce cocktail), it is advisable to pressurize and shake a SECOND TIME. Without removing the cap, shoot another couple seconds of CO2 into the shaker, and shake it AGAIN for 6-8 seconds.
6) Let the beverage REST. Give it a solid 15-30 seconds for the foam to die down. RESTING will help keep as much CO2 in solution as possible. If you double-pressurized as described above, there is no need to let the drink rest between pressurizations--only once at the end.
7) Unscrew the cap SLOWLY. You are trying to prevent any sudden shock that will cause CO2 to come out of solution before you drink it.
8) Carefully pour your now-carbonated beverage quietly down the side of a tilted glass. A chilled, wetted glass will help keep more of the precious bubbles in solution by reducing nucleation sites.0 likes 0 likes
